Pampanga

Known as the “Culinary Capital of the Philippines,” Pampanga is one of the oldest provinces in the Philippines. Its colorful festivals, majestic churches, and renowned Kapampangan cuisine make Pampanga a true feast for the senses.

Eating should be at the top of your list when in Pampanga. Discover the province’s rich flavors with a visit to Kusina ni Atching Lillian, whose owner, Lillian Lising Borromeo, has become synonymous with authentic Kapampangan cuisine. She’ll gladly share stories on Kapampangan culture as she whips you up a feast of classic heirloom recipes in her ancestral home.

Make sure to try Atching Lillian’s Adobong Maputi (adobo minus the soy sauce), Tidtad (Kapampangan blood stew), Lagat Paro (sautéed shrimp with kamias), Paksing Demonyo (vegetables cooked in vinegar), and famous San Nicolas cookies. She’ll even give guests a tour of her kitchen and demonstrate how her cookies are made.

Other popular stopovers in any Pampanga food trip include Claude Tayag’s Bale Dutung (House of Wood) and Aling Lucing’s Sisig, home of the original sisig on a sizzling plate. In San Fernando, you’ll also find Everybody’s Café, an iconic Kapampangan restaurant popular for its exotic dishes like Pindang Damulag (carabao’s meat) with Rice and Carabao’s Milk, Betute (frog), and Camaru (mole crickets).

You might want to pass by some of Pampanga’s 28 historical churches in between meals as well. The province is home to the 18th-century Betis Church, otherwise known as the “Sistine Chapel of the Philippines,” and the San Guillermo Church in Bacolor, a half-buried church that fell victim to the devastating lahar flow from Mt. Pinatubo’s 1991 eruption.

Visitors can view Mt. Pinatubo and its breathtaking crater lake up close by joining a hike up to the historical mountain. Another mountain worth seeing or trekking is the mystical Mt. Arayat, which is said to be the home of Kapampangan diwata, or “mountain goddess,” Mariang Sinukuan.

Pampanga is also home to a number of colorful festivals all year round. One of the most popular is the annual Philippine International Hot Air Balloon Festival, where multicolored hot air balloons fill up the sky above Clark Freeport Zone. Locals also celebrate Holy Week with Maleldo, or the San Pedro Cutud Lenten Rites, where devotees reenact Jesus Christ’s passion and crucifixion.

And once you experience San Fernando’s Ligligan Parul, or Giant Lantern Festival, you’ll understand why it is hailed as the “Christmas Capital of the Philippines.” The city becomes a shimmering beacon of holiday cheer every December, when 20-foot tall lanterns are lit up by thousands of lightbulbs that dance to the tune of Christmas carols and popular music.

Before leaving, pass by the Nepo Mart in Angeles City and pick up some of Susie’s Tibok-Tibok (pure carabao’s milk pudding) and Rosing’s Candies (carabao’s milk candies). That way, you can satisfy your Kapampangan foodie cravings even after you’ve gone back to the city.
