CRISPY - DINUGUAN - PAELLA! Three gastronomically wonderful words that already stand out by themselves but come together to form one fantastic idea of a dish!

I had to do a double take as I read through the menu and saw this listed. Without hesitation, the first order was Craipy Dinuguan Paella!

While it was served in an iron skillet, that was the last thing it had in common with any orinigal Spanish paella.

The grains of rice were long, large and perfectly cooked. The entire dish was genereously coated with dinuguan and mixed with copius amounts of spanish chorizo, pork bits, chili and sprinkled with garlic. Taste was a pleasant combination of sour and spicy. In fact, it was close to what my lola used to make back in our hometown.

There was an added bonus of the crusty rice at the bottom of the skillet. Lucky me since I was the only one who appreciated that.

For taking three of my favorite food words and combining them into one palate pleasing, stomach satisfying dish, Bistro Charlemagne deserves 5 shining stars, 2 thumbs up and double fist bumps and high fives all around!

Decided to have dinner at my friend charlemagne's resto after my Tagaytay weekend trip. Since i was with my Swedish friend, I asked his recommendations.. So Had their prawn in garlic and cheese sauce which is HEAVEN! Braised pork in hoisin sauce, salted fish fried rice and for dessert, pandan crepe. All of them are sooo good. Their salted fish fried rice is a must try. You can even eat it as it is. I think this is the only resto there that is super packed. Will surely recommend this to my friends and will definitely come back. Thank you to Charlemagne for the discount and dessert. Hehe!

The place was packed but the quality of the food was not compromised.
Not even a little. They have the best vietnamese spring rolls! Serving size is good, and the service was superb. Every waiter was smiling all through out and pretty attentive too.

Traffic is terrible at tagaytay so we decided to have our dinner at sta. Rosa area little did we know that solenad has some restaurants open we were there a little late therefore alot of resto were already closed.

But we noticed this resto which is from the same guys from little asia. I can say their main dishes are affordable 200++ to 300++.

A must try in sta rosa.
