We had a great opportunity to try Mama's Table for yesterday's lunch. The place is owned by Chef Vicky Clemente. It's a private dining experience so you need to book in advance (minimum group of 6pax). We had a wonderful experience and truly enjoyed our 8-course meal.

Price: 1,500 + 10% service charge / person

8-course menu:
Quiche in an eggshell
Squash soup with green pinipig
Parmeasan Marshmallow Lollipop
Salmon Fillet with brown butter
Pork Dumpling
Tenderloin Steak
Balsamic Vinaigrette Salad
Strawberry and Peach meringue

Love chef Vicky , for only 1600 ... Really worth it to try her degustation menu , 8 course done with love, taste exquisite & chefs vickys home is such a beautiful place to visit & catch up with friends , know her dad from way back , their family travels a lot & so always nice to see her again & catch up to try her new & classic dishes

We start off with a table full of appetizer on a tableta around 3' long with veggie sticks & dips, homemade popped pig skin with the most amazing dips , nachos & crostini with smoked bangus dips, cheese, bowl of chillies,& anchovies pate

1) Bread cup with manchego cheese and queen Apple jam
* queen Apple can't be digested by itself at raw state & need to be baked to enjoy the fruit

2) Pumpkin soup with maple syrup garnished with roasted chestnuts & honey

3) deep fried swahe with spiced honey(paprika, cayenne, ginger, Tabasco)

4) pork confit soaked in herbs for 24 hours and braised in duck fat for 4 hours , crackled skin to perfection

5) baked salmon with fried cayenne, green onions, braised leeks, asparagus, baby corn, croutons, lemon pulp, and lemon rind ... First time I loved a salmon dish, the flaked meat baked to perfection again

6a) steak with oyster mushroom sauce with assorted mushrooms and egg noodles with truffle oil/truffle risotto

6b)New Zealand lamb chops so soft & tender to some of us who fancy lamb more

7) watercrest, Romanian lettuce, and arugula salad with figs, pistachios, drizzled with fig purée

8a) Creme brûlée and strawberries with whipped Cream

8b)Apple with caramel sauce and whipped cream

U can't tell chef ur allergies & preferred dishes & we end up all happy with the dishes Chef so locking prepared . She even come out to explain how she did each dish & how we're enjoying the food... A must try when ur in Baguio

Reservation strongly recommended... At least a week ahead
