Can't get enough of Monbi's Halo-Halo.
This time, my sister and my Tita from abroad, came over to visit. I should them a photo of my previous experience, how I relentlessly described it as much better than Razon's (no offense to Razon's lovers). So despite the time that we planned on visiting plus the time we had to wait, they were game to have a taste of this famous halo-halo.
We arrived at 10pm, our orders were on a second batch. Unfortunately, our batch lacked ice shavings, so Kuya Gwapo (as some would address him; real name is Edmon, btw ), had to go home and get some ice as well as other ingredients. Since he work solo, we were then on a waiting game. By the time we got our orders, it was already 11:15pm. My tita and sister loved it. They said the milk shavings were so smooth, the quantity of each ingredient were consistent.
The preparation time took awhile. But it was fun watching Kuya Mon, cleaned his station from the previous batch - how systematic and fast he moves. He practices the kitchen motto "clean as you go" 🏻

Monbi's is worth the wait!
Here's the story how I finally got a taste of this famous halo-halo. When I first arrived in Cebu, August last year, K & K recommended that i try this 🏻 . So we tried to order at 11pm. Unfortunately, there is a big number of batches ahead iand waiting takes a long time. We decided on another time instead. I probably tried another 2x more. The time when we had a go for it, it was closed . So this month, while looking for a place to eat along Tisa, we were right on time for the next batch to be made. And the wait is really worth it!
Wondering why it's taking forever to wait? Kuya Owner (sorry i don't know his name coz he is busy making the orders that he has no time to chitchat) is the only one preparing everything - from crushing the milk ice candy to arranging the cups, distributing each ingredient. Yes, he is the only one making every batches. And his customers do not mind watching him prepare everything while waiting for about 30-45mins.
The taste is much better than Razon's Halo-halo. It is of no comparison to Chowking's halo-halo with lots of ingredients. Monbi's is on the minimal side plus the taste, ingredient proportions are consistent. The secret to this delicious taste is the use of shaved milk iced candy. The texture of the shaved iced is very cream and smooth, melts in your mouth (not chunks of iced) Other ingredients include:
fresh banana, mango, crushed milk ice, wafer stick, ube flavored ice cream, sprinkled with corn cereals and Graham crackers, finish with a slush of chocolate syrup.
Operation hours: 7pm-12mn.
If you are in the city, definitely need to try this
