I will be the first to admit that I am not really a fan of noodles and soups. Before the ramen craze, I used to just sip the soup and eat the beef and veggies and leave the noodles... Well, except for Pho.
Then the ramen fad came and I learned to appreciate it. I can somehow differentiate the noodles I eat now. Still not a master like Alex O but I learned to know which is good and not.
Last September (yeah, BLA!), I went to Sorsogon City to attend to a business. Unlike here, life there is day and they rest at night so most of the establishments are closed before 12midnight. My brother and I roamed around the city proper to look for beef mami as I was craving for one. After being greeted by closed shops, my brother suddenly remembered a place that's open 24/7. And I was elated when I saw it!
It was a true-blue turo-turo! I don't recall anymore the last time I ate food in one so I was exceptionally excited to see the place. It was midnight and a bit chilly so I opted to eat outside. I chose to eat the Kinalas --- I didn't know what it was but it looked yummy.
My bowl was served almost instantly and piping hot at that!
The bowl had typical carinderia noodles in it, it was a bit soggy too but what made it special was how the broth was cooked, so the sogginess of the noodles was forgivable. Each sip of the soup was heartwarming. Very, very tasty and flavourful with the perfectly-cooked broth, the boiled egg, freshly chopped chives, roasted-almost-burnt garlic and the melt-in-your-mouth beef balancing the whole taste of the Kinalas. The oil from the fat and the bones cooked for hours added to the savory yumminess of the hot soup.
It was spot on.
I left the place with a wide smile and made a mental note to go back.
