Exactly 11 o' clock in the morning when I arrived at Vask Modern Tapas and Gastronomic Cuisine to avail my free brunch for two. Of course I have my date with me, I'm with the gorgeous Christina R. 128540

I was fascinated with the interior of the restaurant. The modern interior of the restaurant and some of the art masterpiece were awesome and very striking. The Mickey Mouse inspired ceiling reflects with the glass table was uber super cool. But one thing really caught my attention was their Fork Spoon Knife see-saw located at the veranda, awesome!

I don't know if the food were cooked earlier... the appetizers served in a hot plate but its not hot nor warm. Even the main course it's not that warm, but I'm pretty sure that the sides were cooked after we were seated.

We were welcomed and accommodated by their staff nicely. The service was superb.

Thank you to my boss for the experience here, the best sangria so far! We were given complimentary appetizers that were diced octopus on a tile plate that tastes like kinilaw, then for our ordered tapas: ham & cheese and chorizo croquettes, cured meats board, burnt cheese, baby squid grilled to perfection, as in really perfectly cooked it was called the txipirones. I'll definitely check the menu at the dining menu of the gallery soon.

Vask Modern Tapas isn't of the minimalist type of traditional Spanish cuisine--croquetas, chorizo, calamares--but nor is the restaurant particularly cutting-edge either. Their tapas are a bit different and you can tell they're trying to be trendy with the dishes. This modern Spanish Tapas feels like a party most nights, but Chef Chele Gonzales' food is more impressive than the lounge(y) setting suggests. 

The restaurant's sprawling menu still features some solid Iberian fare. Adventurous eats include Pulpo a la Gallega (Smoked Octopus, with potatoes, olive oil, paprika), Foie Gras on Mango Toast, and Carpaccio de Wagyu con Helado de Parmesano (Australian Wagyu Carpaccio with Ice Cream, and Pine Nuts). The best stuff on the menu captures the boisterous spirit of authentic tapas-style dining. The small plates here are boldly flavored and actually portioned to share.

The food:

The Gazpacho (chilled soup) was probably my least favorite. I was expecting something that was refreshing, and full of ripe, summery flavours but what we got was this measly semi-frozen tomato soup. I'm pretty sure there were other wonderful ingredients thrown in there but I couldn't taste any of them because the portion was TOO little.

The Crispy Tuna with Caramelized Onion is where the money is. This is so good and I definitely recommend getting this one when you visit this place. It was light and fresh with the perfect portion size, where I can be satisfied without being full. The touches of caramelized onions were amazing and balanced the seared tuna perfectly.

The Australian Wagyu Carpaccio with pamesan and ice cream seems slightly out of place on this menu (I thought it was more Italian than Spanish) but it was a fun and delicious diversion nonetheless.

The Foie Gras was creamy, (almost feels like you're eating butter) and was lightly charred on top with a blow torch. A bit salty on its own but the mango toast completely balances the dish and takes away that tiny hint of duck liver funk.

For our principales (main course), we had two different kinds of risottos--Mushroom Risotto with stuffed Tomato and Scallops and Blank Ink Risotto. We also tried their version of Callos or Ox Tripe Stew.

I thought the squid ink-flavored risotto was good, but nothing mind-blowing. The scallops were overcooked and had a chewy texture. The Mushroom Risotto with Stuffed Tomato was tastier in my opinion. It was rich and luxurious with just a touch of tanginess coming from the tomato. All that stirring may seem a lot of work but that creamy, dreamy, mushroom risotto was well worth the effort.

Vask Modern Tapas location is a bit small and the dining area is usually packed; a better bet is the 20(?)-seat communal table, where you can nibble Conchinillo Carnitas and Quisquillas Fritas, graze on wispy slices of Iberico Ham, cobble together a tapas feast of oysters, Jamon Serrano, Gambas or scrape away at warm, hearty callos served in hot clay crocks under the glow of filament bulbs.

I usually am not a fan of deconstructed dishes, but the Tarta de Calamansi de Construida, was a clear exception. This dessert had the perfect amount of sweet and tart. The second dessert was a Spanish Bread served with a beautifully quenell custard ice cream. I was concerned that it would be too sweet, but it wasn't. It was fantastically delicious. The bread was moist and fluffy inside with a delicate crunch on the outside from the light caramelized sugar. More please! 128513128076🏻

It was my first visit to Vask Modern Tapas and it’s safe to say that my memories of the restaurant will forever be quite visceral. The visuals are more soothing; Modish filament light bulbs, a stone bar, and contemporary furniture lend the restaurant a fashionably, modern vibe.

You might expect that Chef J. Luis 'Chele' Gonzales and his team to prepare classic tapas but, it's not that simple. This renowned Spanish Chef has bounced between Mugaritz and other major cities of the world and I sensed an urban sophistication in his dishes. The food here is certainly well-executed and you can tell that the ingredients here do most of the work. A little on the pricey side, but not overwhelmingly so. I highly recommend coming here for a taste of Spain. It will be hard to pass up Vask Modern Tapas if you're in the area.

I thoroughly enjoyed my meal here. Food was absolutely lovely, service was great, perfect ambiance too. They are a bit pricey, but you get what you pay for. They also have a good imported beer menu. The outdoor area is also a nice place to hang out for after dinner drinks. The portobello mushroom dish we had was perfect! Mouth-wateringly good!

Last night, I decided to try this resto that serves gastronomical basque cuisine. Oh my, everything was sooo gooood.128069 My personal favorites are Foie Gras on Mango Toast (Foie Gras Mousse placed on top of a mango slice, grabe tulo laway ko sa dish na to), Mejillon Tigre (crispy mussel with bechamel sauce, love!!!), Pulpo a la Gallega (octopus and creamy potato, superb!) and Croquetas de Jamon Y Pollo (chicken croquetes, not in the picture). I tried their other dishes like the squid ink risotto, steak, lime ice cream, huevos, chocolate truffle, tuna burger and they are okay as well. 9786️ You really get what you pay for, I'll definitely come back10084128139

Vask is a great place for dinner and serves for sure one of the best gastronomic Spanish, in particular, Basque cuisine, but their Sunday brunch is really a disappointment.

For the price (around P1,500 per head with tax and SC), the selections were very limited. Overweighted on appetizers that were mostly starch or potato based, and nothing great. And the maincourse was sadly just seafood paella, with very little seafood, and Cochinillo, which was very dry and seemed to have sat on the carving station for quite some time. There was also a tomato based soup ,with potatoes again, which was tastless and very bland.

There was no dessert (come on!), and you have to pay for the sangria or iced tea.

I wouldn't have mind the limited selections if each were mouthwatering. You will get better value, selections and flavor at Alba's for Spanish buffet.

For this restaurant, just go for dinner and ala carte. Don't fall for the trap of going to its weekend brunch. So not worth it!

Have tried this for experience! Me and my workmates tried eating here for early lunch.

They've got long lists. With intimidating and long menu names! If you'd like to have some sort of new food experience, Vask is the place to be!

Tried their menu with influence of high level food science and not so usual cooking techniques! Molecular Gastronomy, Sous Vide and Smoke Presentation. Honestly, science not just make the food very sci-fi. It makes the food tastes good too!

Fair. Their crews assisted us so well. They'd even let us tour their place for appreciation!

Did not quite live up to all the hype I personally prefer las Flores ordered a curried chicken and a risotto have to say I was disappointed with the portion size and the flavor or the lack of it ! Great service though.

Txuleton.. High grade angus , tender & juicy , perfect pink meat, gorgeous texture

Merluza a la bilbainia .. fresh fish, moist , golden beautiful crisp skin

Scallops and black ink risotto(650) ... So flavorful, creamy risotto, soft & tasty fresh seafood bursting in my mouth

Croquettas jamon pollo(295).. Delicious filling & crisp breading

Huevos txistorra .. Perfect poached egg, runny goo mixing with mushroom never tasted so heavenly

Gambas crujientes... Ingenious cooking twist.. Love the taste of the plump juicy prawns popping, plus the crispy wrap... So divine

Trixpirones ...succulent fresh baby squid

Pulpo a la gallega ...sliced octopus with paprika...lovely

Caramel chocolava... Too sweet ... To much caramel IMO

Here's part 2 of my review. We ordered ala carte and started with croquetas and their pintxos (finger food that originated from the Basque region and similar to tapas).
I ordered the Galleta de Rabo Estofado de Toro con Manzana or stew crispy ox-tail and I liked it very much!
My wife who was celebrating her birthday that day was super happy with her order too, Salteado de Portobello y Trigueros con Aceite de Trufa (nosebleed ha ha) or portabello mushrooms with fresh vegetables, sauteed in truffle oil.
My in laws ordered Scallops and Black Ink Rissoto, and grilled seabass.
I brought in Costa Brava's caramel cake since it was her all time favorite and the staff was kind enough to put it in the freezer first and serve it after we had dinner. Their Nespresso coffee was a perfect match to the caramel cake.
It was deilfinitely one very memorable and different kind of experience for me and the birthday celebrant :)

This will be a two part review. This one is about the place. I personally like how they placed Darth Vader wearing what looked like a crown at the lobby and his job is to use the force and hypnotize visitors to Relax and Open their senses for degustation. Chef Luis greeted us at the lobby and we were given a tour by the staff before we sat down at our reserved table. It's a bar and art gallery at the same time as you can see from the photos.

The outdoor lounge offers a great view of Fort Bonifacio skyline during sunset or even at nightime (snapped a couple of long exposure shots). If you've got the moolah, perfect place to bring your special someone or family :)

Had a group dinner with friends here at vask. This is actually my 3rd time here. The place is great. The menu... Extensive. Prices do put a dent on your wallet. But with great tasting food like this, you won't mind so much. I ordered:

Crispy tuna, pan fried foie gras, caramelized onion 695.00

Solomillo con Remolacha y Bacon
US grilled tenderloin, bacon mash potato, port demi-glace, sous vide, chip, beetroot 850.00

The crispy tuna was perfectly seared. The crispy part was i believed crispy noodles that encased the tuna. The foie gras was on point.

The US tenderloin was a disappointment however. The texture was just too hard and chewy. My jaws started hurting from all the chewing. The bacon mash potato was also a let down. It was just not worth the 850. Cut was approx. 150-160g only. Very small.

Overall i still like this place. Great ambiance, decor, and an extensive menu of food and alcoholic beverages. A truly gastronomical experience indeed.
